Feeling: Tired & a little restless, but good

Breakfast
I wasn’t terribly hungry this morning, so this did me good.

1 stalk celery
2 slices tomato
1 soft boiled egg
12 raw almonds
1 cup of chamomile tea – Timmy’s of course!

Snack
1/8 cup raw sunflower seeds w/Mrs. Dash seasoning sprinkled over them. I was only a little hungry so that was perfect for me, and it was yummy!

Lunch
I was pretty hungry when lunch rolled around. I wasn’t sure what I was going to have, and then I remembered that I had bought some GORGEOUS eggplant. Eggplant is something I have never had, so I was excited to try it.

1/8 head of lettuce – chopped up and put on plate

1 large eggplant – peeled and sliced into slender circles

Indian Style rub
1 tsp curry
1/8 tsp curry
8 twists of sea salt grinder
2 sprinkles chili powder

I simply used my fingers to rub this onto both sides of the eggplant then fried it in a little EVOO(Extra Virgin Olive Oil).

*I ate one before they all even finished cooking… that is how good they were!

Garlic Almond Crusted Eggplant
1/2 cup almond meal
2 tsp garlic powder
1 tsp Italian seasoning
6 turns of sea salt grinder
1 egg(I actually did 1 egg & 1 egg white, but had LOADS leftover!)

Mix first 4 ingredients together in shallow dish. Whisk egg in separate bowl. Dip a slice of eggplant in the egg, then place it in the almond mixture. Coat both sides and place on cookie sheet. Prepare the remaining slices. Be careful not to get to much egg on your fingers, as the almond mixture gets REALLY sticky! It then pulls the mixture off the eggplant when you touch it. Then fry in olive oil over medium heat.

They were both DELICIOUS! But I loooooved the almond crusted one! Even my wonderful husband who does like almonds very much LOVED it!

Salad topping
Remaining eggplant pieces – cut into thin strips
1 larger mini yellow pepper – cut into strips
3 mini red peppers – cut into strips
1/4 green bell pepper – cut into thin strips and then cut those in 1/2
3 green onions

Toss eggplant in the fry pan with a little EVOO and getting it started cooking. After about 3 minutes add all peppers. When about 5 minutes away from being done add green onions. I don’t like them getting to wilted, but wanted them a little more cooked then I normally do. When done I took 1/3 of it(it made a LOT!) and put it over my salad.

I had the salad with 2 of each slice and then had an additional almond…. yes, it was THAT good! My lunch was amazing! And it was perfect! And I was nicely full!

I was doing good until later in the afternoon. Then I started getting a bit irritable again. I managed though. It wasn’t NEARLY as bad as yesterday!

Supper… Dinner… Whatever you want to call it!
I was really hungry by the time I finally got to eat last night, but it was worth the wait!!!!!

1 1/2 turkey breast cutlets – pan fried w/Mrs. Dash Steak seasoning
2 slices of onion – cut in 1/2 and then fried as the turkey was finishing

Spinach – enough to cover 1/2 my plate
Alfalfa sprouts – to put a nice layer over the spinach
3 slices of tomato – cut in 1/2 and place over sprouts
Topped with this:
Homemade Simple Guacamole
1 avocado
1/2 lemon, juiced – simple way: cut in 1/2 and squeeze upside down over bowl
1 slice from large onion – chopped(I was liberal because I LOVE onion!)
1 garlic clove – minced or garlic powder to taste
1/2 tsp salt – I used sea salt grinder
1 tsp olive oil
2 slices of tomato – chopped

Scoop avocado into bowl and mash. Add remaining ingredients and stir. Chill for 1 hour. Though I did NOT chill mine and it was delicious!

Drinks
2 – 23.7 fl oz. bottles of filtered water
2 – 32 fl oz. bottles of filtered water

It was a good day. Irritable off and on throughout the day, but not bad 🙂
