If there is one thing we love in our house… it’s breakfast!
Breakfast for breakfast…. breakfast for lunch…. breakfast for supper….. yep! We love it! We have some of our usual favorites: eggs & toast, oatmeal, breakfast muffins(which is another post I will be doing later on). The list goes on and on. One of our favorites though is pancakes. Did I mention pancakes? Favorite. Yep. Pancakes.
I did a post for Gluten-Free Oatmeal Pancakes back when I first started my blog. Now don’t get me wrong, it’s a good recipe. However, 2 years later and I have officially perfected it. Well, I think I have, as does my family. So let’s dive right in!
Gluten Free Oatmeal Pancakes II
1 1/2 c. milk(any type works fine)
4 Tbsp. Greek Yogurt
1/2 c. GF quick oats
1/2 c. GF rolled oats
1 c. GF flour (the top recipe that I updated)
1/8 c. sugar in the raw
2 tsp. baking powder
1 tsp. GF baking soda
1/2 tsp. salt
Cinnamon to taste(we like a LOT!)
Place ingredients in blender in exact order. Put lid on blender and blend until smooth. I start on low speed and work my way up to high. Mixing thoroughly.
1/4 cup measuring cup does the perfect size pancakes for me. Scoop onto hot frying pan. Fry until cooked through.
Yields approx. 32 pancakes this size
I normally make 3 batches this size. I usually have leftovers, which delights my children! Sometimes I make 4 batches so I have leftovers for the next morning.
We also have put different things in them, from chocolate chips to fresh fruit! The fruit of choice this past weekend was BLUEBERRIES!!!!! Topped with homemade whipped cream nonetheless. So. Good.
They are delicious! You would never know they were gluten free! Delightful! I hope you enjoy them as much as we do!!!!
**Note: These can EASILY be changed to a normal recipe with regular flour
